LUNCH & LEARN
We are thrilled to share with you a cooking class by Holly Davis, a wholefood chef, author, and educator. Bento consist of a variety of small dishes, cooked by steaming, grilling, baking or served raw, fermented or pickled, utilising vegetables, grains, noodles, tofu, meat, fish, eggs, and seaweed. There is frequently a miso soup served alongside these and perhaps something sweet too. Traditional Japanese ingredients provide the foundation for the dishes taught today. Holly will give you a range of recipes and ideas to utilise summer-style dishes which means more raw, steamed and simmered dishes and less baking.
In this class you will learn:
Longhouse okara miso broth
Fried lotus root
Wrapped and grilled onigiri (rice balls) and nori no tsukudani
Inarizushi (tofu pocket filled with rice)
Udon and ume noodle salad, with shiso and simmered vegetables
Freshly made tofu with yuzukosho (citrus chilli)
Leatherjacket norimaki
Sticky grilled Longhouse pork rib or chicken on bamboo skewers
Komatsuna ohitashi (mustard greens)
Tsukemono
Yuzu panna cotta with sesame brittle
